Skyr fritters (syrniki)

A traditional Russian recipe, which can be enjoyed as breakfast, snack, or a dessert. It's full of protein, so should keep you full and satisfied without spiking your blood sugar much.

Ingredients

Skyr fritters

Per 2 portions:

  • 200g skyr
  • 1 egg
  • 1 tbsp almond flour
  • 3 tbsp flour
  • 1 tbsp sugar
  • 1 tsp cooking olive oil

Directions

  1. Mix skyr, egg, flour, almond flour, and sugar
  2. Grease a pancake pan with olive oil and heat up on medium heat
  3. Use a tablespoon to put mixture on a pan (you would get around 8 fritters)
  4. Fry from both sides, 4-6 minutes each
  5. Serve with yogurt and jam
